As far as we know, we are the only folks making Baek Kimchi within the UK. Similar to sauerkraut but with more flavour (sorry Germany!) Made with no spice at all, so great with cheeses, French and Italian salamis and soft cheeses. Really cuts through sweet fatty foods. Like all our kimchi, completely unpasteurised with all the good probiotic bacterias that are beneficial for a healthy gut. 3 months fermented.
Tasting notes: Sweet from the flavours of peppers and goji berries but a well balanced saltiness from the crunchy cabbage. Finishes with a mellow umami. As mentioned above, can be eaten on its own or used as a relish for ploughman's lunches, hot dogs or burgers or continental cheese platters and antipasto.
